BBC Good Food bacon and mushroom pasta

A good midweek meal – unashamedly using shop bought pesto rather than making fresh! I see a lot of classic Italian cooks lamenting the addition of cream to pastas, and while I wouldn’t use it in a carbonara, the addition of crime fraiche here does help make this a creamy dish and let’s down the pesto a bit. Dinner ready in the length of time it takes to boil your choice of dry pasta!

Waitrose BLT salad with avocado and new potatoes

A nice recipe that does what it says on the tin! BLT flavours are classic, and the potatoes give this a bit more substance for your evening meal. The shallots, garlic and vinegar add a nice zing of flavour and the avocado provide a rich creaminess. I struggled to plate mine with the same level of vibrant and order, but the flavours are classic and this is a quick and simple dinner packed full of veggies.

Jamie Oliver Smokey mushroom frittata

This was my latest delve in Jamie Oliver’s excellent book ‘Five.’ There’s not much to say about this, other than it’s a true one-pan wonder. If you like bacon and eggs, you’ll like this. Delish!

Jamie Oliver’s quiche leekraine

Jamie’s ‘quiche leekraine’ is a great recipe for a lunch or dinner, which can then be taken to work for lunches the next day – brilliant!

It’s really simple, tastes good, and can even be frozen (well I did).

I suspect quiche purists may suggest it isn’t the traditionally correct recipe, but if you’re after a relatively healthy quiche will all the elements, this is a great place to start!

Novice creamy pasta with bacon and dill

As usual, I will not give away all of the secrets to the recipes I am cooking out of a book, but this is the first of many recipes I intend to cook from Nigel Slater’s beautifully written book ‘A Year of Good Eating: The Kitchen Diaries’

This is an interesting recipe because it has a Scandinavian feel with the cream and dill, with an Italian blend of creamy cheese, pasta and bacon.

It’s a delicious little pasta dish, easy to prepare and a nice change from carbonara!
