Great British Chefs slow-cooked braised ox cheeks in red wine

Such a brilliantly cheap cut and full of flavour. The only work you have to do is a bit of prep and browning, the pot then does the rest of the work.

For me, this was a very nice recipe, but it was a bit aniseedy for me with the cloves and star anise. The meat though, fell apart. So tender.

Great British Chefs’ comte chicken

I know this doesn’t look very nice. I also know it looks nothing like the picture on the website. But my goodness it tasted so good! A cheesey, creamy sauce with white wine and parsley, it’s one of those recipes that as it all comes together, you know is going to taste great. It was so nice I kept tasting it to check the seasoning, just so I could dip my spoon back in. We served ours with some steamed green beans and crusty rolls. The rolls are essential to mop up the sauce!

Great British Chefs – paccheri with lamb Ragu

This is essentially a lamb bolognese. I really enjoyed the dish – though I did find it needed a bit of attention to stop from sticking to the bottom of the pan. The smoked ricotta would have been delicious, but we’re in lockdown, so I have to use more conventional ingredients and used Parmesan. I also could not find paccheri but thought the penne worked fine.
