Nigel Slater’s pancetta, leek and mushroom tortilla

Probably not the best picture I’ve ever taken, but a delicious and simple meal for two from Mr Nigel Slater. Perhaps one of the best things about this recipe for the novice cook at home is that it’s so simple, and can me made with many ingredients we have at home, like those convenient packets of pancetta cubes that last for months and eggs. It’s a one pan recipe, too, which makes it all the more satisfying when the tortilla slides out onto a wooden board to be carved and served with a crunchy salad or even crusty bread.
